Sergei Diaghilev, 1920s ballet impresario, would approve of the theatrical ambience that evokes the Parisian dining salons frequented by exiled Russian aristocracy after that nasty little revolution. In this high-ceilinged room, flickering candles play off the rich upholstery and decor. Every table features plush banquette seating and formal tableware that's constantly refreshed by a subtly attentive staff. Your meal begins with a choice of house-infused vodkas (imaginative flavors include coffee, peppercorn, or tea), and proceeds with Russian-inspired dishes by chef Manfred Brдuer, a detail-minded culinary perfectionist. The menu begins with six different caviars-but still includes borscht and marinated herring! "Ouefs a la Maxims" are whipped eggs and caviar as served at the famous Paris eatery; fragrant Baltic smoked salmon is sliced paper-thin; foie gras arrives atop a tangy endive salad; and Maine lobster is richly presented with apple-beet slaw and Calvados sauce. Despite its location, Diaghilev attracts very few hotel guests, and is usually filled with Beverly Hills types from the surrounding hills.
